INGREDIENTS

- ¾ cup butter, softened (regular or vegan)
- ½ cup light brown sugar
- ½ cup white sugar
- ½ tablespoon vanilla extract
- 1 egg
- ¾ teaspoon baking soda
- 2 cups + 2 tablespoons all-purpose flour
- ¾ teaspoon salt
- ½ cup raspberries, roughly chopped (fresh, frozen, or freeze-dried)
- ½ cup white chocolate, chopped (or white chocolate chips) (regular or vegan white chocolate)

INSTRUCTIONS

1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

2. In a medium bowl, combine the flour, salt, and baking soda.

3. Using a standing mixer with the paddle attachment or a handheld mixer, cream together the butter, light brown sugar, and white sugar until light and fluffy, approximately 2 minutes.

4. Add the egg and vanilla extract to the butter mixture, and mix until well combined.

5. Gradually add the dry ingredients (flour, salt, baking soda) to the wet mixture, mixing until just combined. Be careful not to over-mix. Fold in the chopped white chocolate.

6. Gently fold in the chopped raspberries, being careful not to crush them too much into the dough.

7. Using a cookie scoop or your hands, form dough balls approximately 1.5 tablespoons in size. Place the dough balls onto the prepared baking sheets, spacing them about 3-4 inches apart. Bake one sheet at a time in the preheated oven for 8-10 minutes. While one batch is baking, refrigerate the remaining cookie dough.

8. The cookies are ready when the edges are slightly golden brown and the tops appear set but still soft.

9. Allow the cookies to cool on the baking sheet for 10 minutes before transferring them to a wire rack to cool completely. Enjoy your delicious homemade white chocolate raspberry cookies!
